We work from home, and I used to assume that meant calmer mornings. It doesn’t always. Some days we’re trying to make an appointment or gymnastics and still stay on schedule. Other days I just have more to do, so it has to be a quick breakfast kind of morning.
Most of the time I still like a longer breakfast. Homemade waffles, homemade pancakes, French toast, or French toast sticks. I’ll also make a frittata or a quiche for the whole family — those work for lunch too — and save some for Ellie’s breakfast with fruit and a side of toast.
Quick note: The plates below are perfectly fine breakfasts even when we’re not in a hurry. They’re just our go-tos when I don’t have time for that longer version. This is not how I cook for her every morning. I still want well-rounded meals built around protein, carbs (she burns through them), and fats. These are that same idea, just faster.

Applegate small frittatas with yogurt and berries
We tried Applegate Frittata Bites today — their small frittatas — and she really liked them. I served them with yogurt and berries, and it was an easy plate with protein and fruit without me standing at the stove.

And yes, the hard-boiled eggs are the pre-peeled ones from Sam’s Club and Costco. I always swore I would never buy those, until I had a kid who will always eat a hard-boiled egg. When I can’t get her to take another protein, I hand her one and she eats it every time, plus the choline.
